It seems childish to sum up Jeremy Chan as a chef in one, two, or even three words, much like the indefinable food of Ikoyi. The son of Chinese-Canadian parents, Chan was born in the UK but raised in Hong Kong, Canada, and the UK before earning his Princeton degree in philosophy and languages and working briefly in the finance industry in Europe. Thankfully, he quickly realised that his fascination with diverse cultures was actually going towards the field of food.
Chan, who trained under chefs such as René Redzepi and Heston Blumenthal, opened Ikoyi in London with his childhood friend Iré Hassan-Odukale in 2017. Since then, the restaurant has received praise and accolades (two Michelin stars and number 49 on The World’s 50 Best Restaurants), and Chan and Hassan-Odukale have developed their own culinary identity that is frequently described as spice-driven around British micro-seasonality, in reference to slowly grown vegetables, sustainable.
Ikoyi is now in a new phase of development following a relocation and remodelling (by Danish architect and designer David Thulstrup) last year. As is Chan, whose debut monograph Ikoyi: A Journey through Bold Heat with Recipes will be released on April 6, 2023. While the chef was in Asia working with Mingoo Kang of Mingles in Seoul, another great chef, we had a brief conversation with him to learn more about his recent endeavours.
